Classic Homemade Macaroni and Cheese

Ingredients:

  • 1 lb (450g) Elbow macaroni

  • 1/2 cup Unsalted butter

  • 1/2 cup All-purpose flour

  • 4 cups Whole milk

  • 4 cups Sharp cheddar cheese, shredded

  • 2 cups Gruyère cheese, shredded

  • 1/2 tsp Salt

  • 1/2 tsp Black pepper

  • 1/4 tsp Paprika

  • Topping: 1 cup Panko breadcrumbs mixed with 2 tbsp melted butter

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.

  2. Boil macaroni in salted water until al dente (about 2 minutes less than package directions). Drain.

  3. Melt butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute.

  4. Gradually whisk in milk until smooth. Simmer until thickened (about 5 minutes).

  5. Remove from heat. Stir in spices and the cheeses until melted.

  6. Fold in the pasta. Pour mixture into the baking dish.

  7. Sprinkle buttered breadcrumbs over the top.

  8. Bake for 20–25 minutes until golden and bubbly.
