Tacos al Pastor (Home Style)

Ingredients:

  • 2 lbs Pork shoulder, sliced thin

  • Marinade: 3 Guajillo chilies (rehydrated), 1/2 cup Pineapple juice, 2 tbsp Vinegar, 1 tbsp Achiote paste, 2 cloves Garlic, 1 tsp Oregano, 1 tsp Cumin.

  • 1 cup Pineapple chunks

  • 12 Corn tortillas

  • Onion and cilantro for garnish

Instructions:

  1. Blend marinade ingredients until smooth.

  2. Pour over pork slices and marinate for at least 4 hours (or overnight).

  3. Heat a skillet or grill pan over high heat with a little oil.

  4. Cook pork slices until charred and cooked through (about 5 mins). Chop into small pieces.

  5. Grill the pineapple chunks slightly.

  6. Serve pork on warm tortillas topped with pineapple, onion, and cilantro.
