Tacos al Pastor (Home Style)
Ingredients:
2 lbs Pork shoulder, sliced thin
Marinade: 3 Guajillo chilies (rehydrated), 1/2 cup Pineapple juice, 2 tbsp Vinegar, 1 tbsp Achiote paste, 2 cloves Garlic, 1 tsp Oregano, 1 tsp Cumin.
1 cup Pineapple chunks
12 Corn tortillas
Onion and cilantro for garnish
Instructions:
Blend marinade ingredients until smooth.
Pour over pork slices and marinate for at least 4 hours (or overnight).
Heat a skillet or grill pan over high heat with a little oil.
Cook pork slices until charred and cooked through (about 5 mins). Chop into small pieces.
Grill the pineapple chunks slightly.
Serve pork on warm tortillas topped with pineapple, onion, and cilantro.
