Baja Fish Tacos

Ingredients:

  • 1 lb White fish (Cod or Halibut), cut into strips

  • 12 Corn tortillas

  • Batter: 1 cup Flour, 1 tsp Baking powder, 1 tsp Salt, 1 cup Mexican beer (lager).

  • White Sauce: 1/2 cup Mayo, 1/2 cup Sour cream, 1 tbsp Lime juice.

  • Slaw: 2 cups Shredded cabbage tossed with lime juice.

Instructions:

  1. Whisk batter ingredients. It should be like pancake batter.

  2. Heat oil in a deep pan to 375°F (190°C).

  3. Dip fish strips in batter and fry until golden (3–4 mins).

  4. Mix sauce ingredients.

  5. Assemble: Tortilla, fried fish, cabbage slaw, drizzle of white sauce.
