Huevos Rancheros

Ingredients:

  • 4 Corn tortillas

  • 4 Eggs

  • 1 cup Salsa Ranchera (warm) or warmed salsa roja

  • 1 cup Refried beans

  • Oil for frying

  • Cilantro and Cotija cheese for garnish

Instructions:

  1. Lightly fry tortillas in oil just to soften/warm them (don't make them crispy chips). Drain.

  2. Fry eggs sunny-side up in the same pan.

  3. Spread a layer of refried beans on a tortilla.

  4. Top with a fried egg.

  5. Smother the egg with warm salsa. Garnish with cheese and cilantro.
