Beef Birria (Stew)
Ingredients:
2 lbs Beef chuck roast, cut into chunks
4 Guajillo chilies (dried)
2 Ancho chilies (dried)
1 tsp Oregano, 1 tsp Cumin, 1 tsp Thyme
1 cinnamon stick
4 cloves Garlic
4 cups Beef broth
Instructions:
Boil dried chilies in water for 10 mins to soften. Blend with garlic and a splash of water.
Sear beef chunks in a pot.
Add the blended chili paste, spices, and beef broth.
Simmer on low heat (covered) for 3 hours until meat is falling apart.
Shred meat and serve in the broth (consomé) with onions and cilantro.
