Beef Birria (Stew)

Ingredients:

  • 2 lbs Beef chuck roast, cut into chunks

  • 4 Guajillo chilies (dried)

  • 2 Ancho chilies (dried)

  • 1 tsp Oregano, 1 tsp Cumin, 1 tsp Thyme

  • 1 cinnamon stick

  • 4 cloves Garlic

  • 4 cups Beef broth

Instructions:

  1. Boil dried chilies in water for 10 mins to soften. Blend with garlic and a splash of water.

  2. Sear beef chunks in a pot.

  3. Add the blended chili paste, spices, and beef broth.

  4. Simmer on low heat (covered) for 3 hours until meat is falling apart.

  5. Shred meat and serve in the broth (consomé) with onions and cilantro.
