Chicken Fried Steak
Ingredients:
4 Cube steaks (beef tenderized with a machine)
1.5 cups Flour
2 Eggs, beaten with 1/4 cup milk
1 tsp Seasoned salt
1 tsp Black pepper
1/2 tsp Paprika
Oil for frying
Gravy: 2 tbsp Pan drippings, 2 tbsp Flour, 1.5 cups Milk, lots of Black Pepper.
Instructions:
Mix flour, seasoned salt, pepper, and paprika in a shallow dish. Put egg wash in another.
Dredge steaks in flour, then egg, then flour again. Press flour into the meat.
Heat 1/2 inch of oil in a skillet. Fry steaks 3–4 minutes per side until golden. Remove and drain.
Pour off all but 2 tbsp of oil/drippings.
Whisk in 2 tbsp flour; cook for 1 minute.
Slowly whisk in milk. Simmer until thickened. Season heavily with black pepper.
Pour gravy over the steaks.
