Chicken Fried Steak

Ingredients:

  • 4 Cube steaks (beef tenderized with a machine)

  • 1.5 cups Flour

  • 2 Eggs, beaten with 1/4 cup milk

  • 1 tsp Seasoned salt

  • 1 tsp Black pepper

  • 1/2 tsp Paprika

  • Oil for frying

  • Gravy: 2 tbsp Pan drippings, 2 tbsp Flour, 1.5 cups Milk, lots of Black Pepper.

Instructions:

  1. Mix flour, seasoned salt, pepper, and paprika in a shallow dish. Put egg wash in another.

  2. Dredge steaks in flour, then egg, then flour again. Press flour into the meat.

  3. Heat 1/2 inch of oil in a skillet. Fry steaks 3–4 minutes per side until golden. Remove and drain.

  4. Pour off all but 2 tbsp of oil/drippings.

  5. Whisk in 2 tbsp flour; cook for 1 minute.

  6. Slowly whisk in milk. Simmer until thickened. Season heavily with black pepper.

  7. Pour gravy over the steaks.
