Southern Shrimp and Grits

Ingredients:

  • 1 cup Stone-ground grits

  • 4 cups Chicken broth

  • 1 cup Sharp cheddar cheese, shredded

  • 1 lb Shrimp (peeled and deveined)

  • 6 slices Bacon, chopped

  • 2 cloves Garlic, minced

  • 3 Green onions, sliced

  • 1 tbsp Lemon juice

  • 1/2 tsp Cajun seasoning

Instructions:

  1. Bring broth to a boil. Whisk in grits. Reduce heat to low, cover, and simmer for 20–25 minutes (stirring occasionally) until thick.

  2. Stir cheese into grits until melted. Remove from heat.

  3. In a skillet, fry chopped bacon until crispy. Remove bacon, keep the fat.

  4. Add shrimp and Cajun seasoning to the bacon fat. Sauté 3 minutes until pink.

  5. Add garlic and cook 1 more minute. Stir in lemon juice and green onions.

  6. Spoon grits into bowls and top with the shrimp mixture and crispy bacon bits.
