Southern Shrimp and Grits
Ingredients:
1 cup Stone-ground grits
4 cups Chicken broth
1 cup Sharp cheddar cheese, shredded
1 lb Shrimp (peeled and deveined)
6 slices Bacon, chopped
2 cloves Garlic, minced
3 Green onions, sliced
1 tbsp Lemon juice
1/2 tsp Cajun seasoning
Instructions:
Bring broth to a boil. Whisk in grits. Reduce heat to low, cover, and simmer for 20–25 minutes (stirring occasionally) until thick.
Stir cheese into grits until melted. Remove from heat.
In a skillet, fry chopped bacon until crispy. Remove bacon, keep the fat.
Add shrimp and Cajun seasoning to the bacon fat. Sauté 3 minutes until pink.
Add garlic and cook 1 more minute. Stir in lemon juice and green onions.
Spoon grits into bowls and top with the shrimp mixture and crispy bacon bits.
