Chilaquiles Rojos

Ingredients:

  • 6 cups Tortilla chips (sturdy ones)

  • 2 cups Salsa Roja (or Enchilada sauce)

  • 1/2 cup Chicken broth

  • 2 Eggs

  • 1/2 cup Queso Fresco

  • Cilantro and Onion slices

Instructions:

  1. Heat salsa and broth in a large pan until simmering.

  2. Add tortilla chips. Toss gently to coat.

  3. Cook for 2–3 minutes (chips should soften but not turn to mush).

  4. While chips cook, fry eggs in a separate pan.

  5. Serve chips topped with the fried eggs, cheese, onion, and cilantro.
