Chilaquiles Rojos
Ingredients:
6 cups Tortilla chips (sturdy ones)
2 cups Salsa Roja (or Enchilada sauce)
1/2 cup Chicken broth
2 Eggs
1/2 cup Queso Fresco
Cilantro and Onion slices
Instructions:
Heat salsa and broth in a large pan until simmering.
Add tortilla chips. Toss gently to coat.
Cook for 2–3 minutes (chips should soften but not turn to mush).
While chips cook, fry eggs in a separate pan.
Serve chips topped with the fried eggs, cheese, onion, and cilantro.
