Quesadillas (Authentic Style)

Ingredients:

  • 2 cups Masa Harina (corn flour)

  • 1.5 cups Warm water

  • 2 cups Oaxaca cheese (or Mozzarella), shredded

  • Salsa for serving

Instructions:

  1. Mix masa and water to form a soft dough (like playdough).

  2. Press dough balls into tortillas using a press or heavy plate.

  3. Cook tortilla on a hot griddle (comal). Flip once.

  4. Add cheese to one half, fold the tortilla over.

  5. Cook until cheese melts and spots appear on the outside.
