Sopa de Tortilla (Tortilla Soup)

Ingredients:

  • 1 Onion, chopped

  • 2 cloves Garlic

  • 1 can (28oz) Whole tomatoes

  • 4 cups Chicken broth

  • 1 tsp Cumin

  • 4 Corn tortillas, cut into strips and fried

  • Toppings: Avocado, sour cream, cheese, lime.

Instructions:

  1. Sauté onion and garlic. Add tomatoes and cumin. Simmer 10 mins.

  2. Blend the tomato mixture until smooth.

  3. Return to pot, add chicken broth, and simmer 15 mins.

  4. Place fried tortilla strips in serving bowls.

  5. Ladle hot soup over strips. Top with avocado and cheese.
