Elotes (Mexican Street Corn)
Ingredients:
4 ears Corn on the cob (shucked)
1/4 cup Mayonnaise
1/2 cup Cotija cheese, crumbled
1 tsp Chili powder (or Tajín)
1 Lime, cut into wedges
Cilantro
Instructions:
Grill or boil corn until cooked (grilling adds char which is better).
Brush mayonnaise all over the hot corn.
Roll the corn in the crumbled Cotija cheese.
Sprinkle with chili powder and cilantro.
Squeeze lime juice over the top before eating.
