Boston Baked Beans

Ingredients:

  • 1 lb Dried Navy beans (soaked overnight)

  • 1/2 lb Salt pork or thick-cut bacon, diced

  • 1 Onion, diced

  • 1/2 cup Molasses

  • 1/2 cup Brown sugar

  • 1 tbsp Dry mustard powder

  • 1 tbsp Worcestershire sauce

  • 4 cups Hot water (approx.)

Instructions:

  1. Preheat oven to 300°F (150°C).

  2. Drain the soaked beans. Place them in a large pot with fresh water, bring to boil, and simmer 10 minutes. Drain again.

  3. In a Dutch oven or bean pot, combine beans, onion, molasses, sugar, mustard, Worcestershire, and salt pork.

  4. Pour in enough hot water to just cover the beans.

  5. Cover with a lid or foil. Bake for 4 to 5 hours.

  6. Check every hour; if beans look dry, add a little more hot water.

  7. Remove lid for the last 30 minutes to thicken the sauce.
