Chicken and Sausage Jambalaya

Ingredients:

  • 1 lb Chicken breast, diced

  • 1 lb Andouille sausage, sliced

  • 1 Onion, diced

  • 1 Green bell pepper, diced

  • 2 stalks Celery, diced

  • 2 cups Long-grain white rice

  • 4 cups Chicken broth

  • 1 can (14oz) Diced tomatoes

  • 2 tbsp Cajun seasoning

Instructions:

  1. Brown chicken and sausage in a large heavy pot. Remove meat.

  2. Add onion, pepper, and celery (the "Trinity") to the pot. Sauté until soft.

  3. Stir in rice and Cajun seasoning. Toast rice for 1 minute.

  4. Add tomatoes, broth, and the cooked meat back in.

  5. Bring to a boil, then reduce heat to low. Cover tightly.

  6. Simmer for 20–25 minutes until rice is tender and liquid absorbed.

  7. Fluff with a fork before serving.
