Chicken and Sausage Jambalaya
Ingredients:
1 lb Chicken breast, diced
1 lb Andouille sausage, sliced
1 Onion, diced
1 Green bell pepper, diced
2 stalks Celery, diced
2 cups Long-grain white rice
4 cups Chicken broth
1 can (14oz) Diced tomatoes
2 tbsp Cajun seasoning
Instructions:
Brown chicken and sausage in a large heavy pot. Remove meat.
Add onion, pepper, and celery (the "Trinity") to the pot. Sauté until soft.
Stir in rice and Cajun seasoning. Toast rice for 1 minute.
Add tomatoes, broth, and the cooked meat back in.
Bring to a boil, then reduce heat to low. Cover tightly.
Simmer for 20–25 minutes until rice is tender and liquid absorbed.
Fluff with a fork before serving.
