Chicken Pot Pie

Ingredients:

  • 2 Pie crusts (refrigerated store-bought)

  • 2 cups Cooked chicken, shredded

  • 1 bag (12oz) Frozen mixed vegetables (peas, carrots, corn)

  • 1/3 cup Butter

  • 1/3 cup Flour

  • 1.5 cups Chicken broth

  • 1/2 cup Milk

  • Salt, pepper, and thyme

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Melt butter in a saucepan. Stir in flour and cook 1 minute.

  3. Whisk in broth and milk. Simmer until thick.

  4. Stir in chicken, frozen veggies, salt, pepper, and a pinch of thyme. Remove from heat.

  5. Line a pie dish with one crust. Pour in the filling.

  6. Top with the second crust. Seal edges and cut slits in the top for steam.

  7. Bake for 35–40 minutes until crust is golden brown. Let cool 10 minutes before slicing.
