Maryland Crab Cakes
Ingredients:
1 lb Lump crab meat (checked for shells)
1 Egg, beaten
1/4 cup Mayonnaise
1 tsp Dijon mustard
1.5 tsp Old Bay seasoning
1/2 cup Panko breadcrumbs (plus more for coating)
2 tbsp Butter for frying
Instructions:
In a bowl, whisk egg, mayonnaise, mustard, and Old Bay.
Gently fold in the crab meat and breadcrumbs. Be careful not to break up the crab lumps too much.
Form mixture into 6 cakes. If they are too wet, add a few more crumbs.
Refrigerate for 30 minutes to set.
Melt butter in a skillet over medium heat.
Fry cakes for 4 minutes per side until golden brown and heated through.
Serve with lemon wedges and tartar sauce.
