Maryland Crab Cakes

Ingredients:

  • 1 lb Lump crab meat (checked for shells)

  • 1 Egg, beaten

  • 1/4 cup Mayonnaise

  • 1 tsp Dijon mustard

  • 1.5 tsp Old Bay seasoning

  • 1/2 cup Panko breadcrumbs (plus more for coating)

  • 2 tbsp Butter for frying

Instructions:

  1. In a bowl, whisk egg, mayonnaise, mustard, and Old Bay.

  2. Gently fold in the crab meat and breadcrumbs. Be careful not to break up the crab lumps too much.

  3. Form mixture into 6 cakes. If they are too wet, add a few more crumbs.

  4. Refrigerate for 30 minutes to set.

  5. Melt butter in a skillet over medium heat.

  6. Fry cakes for 4 minutes per side until golden brown and heated through.

  7. Serve with lemon wedges and tartar sauce.
