Classic Fried Rice
Ingredients:
4 cups Cold cooked white rice (day-old is best)
2 large Eggs, beaten
1/2 cup Peas and carrots (frozen)
2 Green onions, chopped
2 tbsp Soy sauce
1 tbsp Oyster sauce
1 tsp Sesame oil
2 tbsp Vegetable oil
Instructions:
Heat 1 tbsp oil in a wok. Scramble the eggs quickly, break them up, and set aside.
Add remaining oil. Stir fry peas and carrots for 2 minutes.
Add the cold rice. Break up clumps with a spatula and stir-fry on high heat until hot.
Drizzle soy sauce, oyster sauce, and sesame oil over the rice. Toss to distribute color evenly.
Stir in the cooked eggs and green onions.
