Classic Fried Rice

Ingredients:

  • 4 cups Cold cooked white rice (day-old is best)

  • 2 large Eggs, beaten

  • 1/2 cup Peas and carrots (frozen)

  • 2 Green onions, chopped

  • 2 tbsp Soy sauce

  • 1 tbsp Oyster sauce

  • 1 tsp Sesame oil

  • 2 tbsp Vegetable oil

Instructions:

  1. Heat 1 tbsp oil in a wok. Scramble the eggs quickly, break them up, and set aside.

  2. Add remaining oil. Stir fry peas and carrots for 2 minutes.

  3. Add the cold rice. Break up clumps with a spatula and stir-fry on high heat until hot.

  4. Drizzle soy sauce, oyster sauce, and sesame oil over the rice. Toss to distribute color evenly.

  5. Stir in the cooked eggs and green onions.
