Classic Herb-Roasted Turkey

Ingredients:

  • 1 (12–14 lb) Whole Turkey (thawed, giblets removed)

  • 1/2 cup Unsalted butter, softened

  • 2 tbsp Fresh rosemary, chopped

  • 2 tbsp Fresh thyme, chopped

  • 1 tbsp Fresh sage, chopped

  • 3 cloves Garlic, minced

  • Salt and Black pepper

  • Inside Cavity: 1 Lemon (halved), 1 Onion (quartered), 1 head Garlic (halved).

Instructions:

  1. Preheat oven to 325°F (165°C).

  2. Pat the turkey completely dry with paper towels (crucial for crispy skin).

  3. In a small bowl, mix softened butter, rosemary, thyme, sage, minced garlic, 1 tbsp salt, and 1 tsp pepper.

  4. Stuff the cavity with the lemon, onion, and garlic head. Tie legs together with kitchen twine.

  5. Loosen the skin over the breast meat with your fingers. Rub half the butter mixture under the skin.

  6. Rub the remaining butter all over the outside of the skin.

  7. Roast for approx. 13–15 minutes per pound (about 3 to 3.5 hours) until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).

  8. Let rest for at least 30 minutes before carving.
