Creamy Mashed Potatoes
Ingredients:
5 lbs Yukon Gold potatoes, peeled and quartered
1/2 cup Unsalted butter
1 cup Heavy cream (warm)
1/2 cup Whole milk (warm)
4 oz Cream cheese, softened (optional, for extra richness)
1 tbsp Salt
1 tsp Black pepper
Chives for garnish
Instructions:
Place potatoes in a large pot and cover with cold water by 1 inch. Add a heavy pinch of salt.
Bring to a boil, reduce heat, and simmer until very tender (about 15–20 minutes).
Drain well. Return potatoes to the hot pot for 1 minute to dry out excess moisture.
Mash potatoes using a masher or ricer.
Stir in butter and cream cheese until melted.
Gradually pour in warm cream and milk while stirring until desired consistency is reached.
Season with salt and pepper. Top with chives.
