Szechuan Dry-Fried Green Beans

Ingredients:

  • 1 lb Green beans, trimmed and dried thoroughly

  • 2 tbsp Oil

  • 1 tbsp Garlic, minced

  • 1 tbsp Ginger, minced

  • 4 Dried red chilies

  • 1 tsp Sichuan peppercorns

  • 1 tbsp Soy sauce

Instructions:

  1. Heat oil in a wok. Stir fry beans on high heat until skins are puckered/blistered (about 5–7 minutes). Remove beans.

  2. Add ginger, garlic, chilies, and peppercorns to the remaining oil. Fry 30 seconds.

  3. Return beans to the pan.

  4. Add soy sauce and toss to coat. Serve hot.
