Dan Dan Noodles

Ingredients:

  • 8 oz Wheat noodles

  • 1/2 lb Ground pork

  • 2 tbsp Sui Mi Ya Cai (preserved mustard greens) - optional but authentic

  • Sauce: 2 tbsp Chili oil, 1 tbsp Soy sauce, 1 tbsp Chinese sesame paste (or peanut butter), 1 tsp Sichuan peppercorn powder, 1 clove Garlic (minced).

  • Chicken broth (about 1/4 cup)

  • Peanuts and scallions for garnish

Instructions:

  1. Fry pork until crispy. Add preserved greens if using.

  2. Whisk sauce ingredients in the serving bowl with the hot chicken broth to loosen it.

  3. Boil noodles. Drain.

  4. Place noodles in the bowl with the sauce.

  5. Top with the pork mixture, peanuts, and scallions. Mix well before eating.
