Fluffy Buttermilk Pancakes

Ingredients:

  • 2 cups All-purpose flour

  • 2 tbsp Sugar

  • 2 tsp Baking powder

  • 1 tsp Baking soda

  • 1/2 tsp Salt

  • 2 cups Buttermilk

  • 2 Eggs

  • 1/4 cup Melted butter

Instructions:

  1. Whisk dry ingredients (flour, sugar, baking powder, soda, salt) in a bowl.

  2. Whisk wet ingredients (buttermilk, eggs, melted butter) in a separate jug.

  3. Pour wet into dry. Stir gently until just combined (lumps are okay!).

  4. Heat a griddle or pan over medium heat and grease lightly.

  5. Pour 1/3 cup batter for each pancake.

  6. Flip when bubbles form on the surface and pop (about 2-3 minutes).

  7. Cook other side until golden. Serve with maple syrup.
