Slow Cooker Pot Roast

Ingredients:

  • 3 lb Beef chuck roast

  • 1 lb Baby potatoes

  • 4 Carrots, cut into chunks

  • 1 Onion, quartered

  • 2 cups Beef broth

  • 1 packet Onion soup mix (or 1 tbsp onion powder, 1 tsp garlic powder, 1 tsp thyme)

  • Salt and pepper

Instructions:

  1. Season roast with salt and pepper. Sear in a hot pan with oil to brown all sides.

  2. Place potatoes, carrots, and onion in the bottom of a slow cooker.

  3. Place beef on top of vegetables.

  4. Pour beef broth over the beef and sprinkle with seasoning mix.

  5. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until meat shreds easily with a fork.
