Slow Cooker Pot Roast
Ingredients:
3 lb Beef chuck roast
1 lb Baby potatoes
4 Carrots, cut into chunks
1 Onion, quartered
2 cups Beef broth
1 packet Onion soup mix (or 1 tbsp onion powder, 1 tsp garlic powder, 1 tsp thyme)
Salt and pepper
Instructions:
Season roast with salt and pepper. Sear in a hot pan with oil to brown all sides.
Place potatoes, carrots, and onion in the bottom of a slow cooker.
Place beef on top of vegetables.
Pour beef broth over the beef and sprinkle with seasoning mix.
Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until meat shreds easily with a fork.
