Homestyle Chicken Noodle Soup
Ingredients:
2 tbsp Butter
1 Onion, chopped
3 Carrots, sliced into coins
3 stalks Celery, sliced
2 cloves Garlic, minced
8 cups Chicken broth
2 cups Cooked chicken, shredded or diced (rotisserie works great)
3 cups Wide egg noodles (uncooked)
1 tsp Dried thyme
1 Bay leaf
Salt and pepper
Instructions:
Melt butter in a large pot over medium heat.
Add onion, carrots, and celery. Sauté for 5–7 minutes until slightly soft.
Add garlic and thyme; cook for 1 minute.
Pour in chicken broth and add the bay leaf. Bring to a boil.
Stir in the egg noodles. Reduce heat and simmer for 10 minutes (or until noodles are tender).
Stir in the cooked chicken. Simmer for 2–3 minutes to heat the meat through.
Remove bay leaf. Season with salt and pepper to taste.
