Horchata

Ingredients:

  • 1 cup Long-grain white rice (uncooked)

  • 1 Cinnamon stick

  • 4 cups Water (for soaking)

  • 1/2 cup Milk

  • 1/2 cup Sugar

  • 1 tsp Vanilla

Instructions:

  1. Blend rice and cinnamon stick with 2 cups warm water just enough to break up the rice (don't powder it).

  2. Add remaining 2 cups water. Let soak in fridge for at least 4 hours.

  3. Blend again until very smooth.

  4. Strain through a fine mesh sieve or cheesecloth (discard solids).

  5. Stir in milk, sugar, and vanilla. Serve over ice.
