Horchata
Ingredients:
1 cup Long-grain white rice (uncooked)
1 Cinnamon stick
4 cups Water (for soaking)
1/2 cup Milk
1/2 cup Sugar
1 tsp Vanilla
Instructions:
Blend rice and cinnamon stick with 2 cups warm water just enough to break up the rice (don't powder it).
Add remaining 2 cups water. Let soak in fridge for at least 4 hours.
Blend again until very smooth.
Strain through a fine mesh sieve or cheesecloth (discard solids).
Stir in milk, sugar, and vanilla. Serve over ice.
