Sweet and Sour Pork
Ingredients:
1 lb Pork shoulder, cut into 1-inch cubes
Marinade: 1 tsp Soy sauce, 1 tsp Shaoxing wine, 1 egg white.
Batter: 1/2 cup Cornstarch (for dusting).
1 Green bell pepper, cubed
1 Red bell pepper, cubed
1 cup Pineapple chunks
Sauce:
1/4 cup Ketchup
1/4 cup White vinegar
1/4 cup Sugar
1 tbsp Soy sauce
1/2 tsp Salt
Instructions:
Marinate pork with soy sauce, wine, and egg white for 20 minutes.
Coat pork cubes generously in cornstarch.
Deep fry pork at 350°F (175°C) until golden and crispy (about 4-5 mins). Remove and drain.
Whisk sauce ingredients together.
In a clean wok, heat 1 tbsp oil. Stir fry peppers for 2 minutes.
Add the sauce mixture to the wok. Let it bubble and thicken.
Add the fried pork and pineapple. Toss quickly to coat. Serve immediately so the pork stays crisp.
