Hot and Sour Soup
Ingredients:
4 cups Chicken broth
1/2 block Firm tofu, cut into strips
1/2 cup Bamboo shoots, sliced strips
1/2 cup Wood Ear mushrooms, sliced
1/4 cup White vinegar (adjust to taste)
1 tsp White pepper (ground)
2 tbsp Soy sauce
1 Egg, beaten
2 tbsp Cornstarch slurry (thickener)
Instructions:
Boil broth with mushrooms and bamboo shoots for 5 minutes.
Add tofu, soy sauce, vinegar, and white pepper.
Stir in cornstarch slurry to thicken.
Turn off heat and stream in the egg to create ribbons.
Top with sesame oil and scallions.
