Scallion Pancakes (Cong You Bing)

Ingredients:

  • 2 cups All-purpose flour

  • 1 cup Boiling water

  • 1/2 cup Chopped scallions (green onions)

  • Oil for brushing and frying

  • Salt

Instructions:

  1. Mix flour and boiling water. Knead into a smooth dough. Let rest 30 mins.

  2. Divide dough into 4 pieces. Roll one piece out into a thin circle.

  3. Brush with oil, sprinkle with salt and scallions.

  4. Roll it up tightly like a cigar. Then coil the cigar into a snail shape. Flatten the snail with a rolling pin into a pancake.

  5. Pan-fry in oil over medium heat until golden brown on both sides.
