Scallion Pancakes (Cong You Bing)
Ingredients:
2 cups All-purpose flour
1 cup Boiling water
1/2 cup Chopped scallions (green onions)
Oil for brushing and frying
Salt
Instructions:
Mix flour and boiling water. Knead into a smooth dough. Let rest 30 mins.
Divide dough into 4 pieces. Roll one piece out into a thin circle.
Brush with oil, sprinkle with salt and scallions.
Roll it up tightly like a cigar. Then coil the cigar into a snail shape. Flatten the snail with a rolling pin into a pancake.
Pan-fry in oil over medium heat until golden brown on both sides.
