Jägerschnitzel (Hunter’s Schnitzel)

Ingredients:

  • 4 Pork cutlets (pounded thin)

  • Breading: 1/2 cup Flour, 2 Eggs (beaten), 1 cup Breadcrumbs

  • Butter/Oil for frying

  • Gravy:

    • 1 tbsp Butter

    • 8 oz Mushrooms, sliced

    • 1/2 Onion, diced

    • 1 cup Beef broth

    • 1/2 cup Heavy cream

    • 1 tbsp Flour (to thicken)

Instructions:

  1. Dredge pork in flour, then egg, then breadcrumbs.

  2. Fry in oil/butter mixture until golden brown (3 mins per side). Set aside.

  3. In the same pan, sauté onions and mushrooms until soft.

  4. Sprinkle 1 tbsp flour over mushrooms; cook 1 minute.

  5. Deglaze with beef broth. Simmer 3 minutes.

  6. Stir in cream and simmer until thickened. Season with salt/pepper.

  7. Serve sauce poured over the crispy schnitzel.
