Jägerschnitzel (Hunter’s Schnitzel)
Ingredients:
4 Pork cutlets (pounded thin)
Breading: 1/2 cup Flour, 2 Eggs (beaten), 1 cup Breadcrumbs
Butter/Oil for frying
Gravy:
1 tbsp Butter
8 oz Mushrooms, sliced
1/2 Onion, diced
1 cup Beef broth
1/2 cup Heavy cream
1 tbsp Flour (to thicken)
Instructions:
Dredge pork in flour, then egg, then breadcrumbs.
Fry in oil/butter mixture until golden brown (3 mins per side). Set aside.
In the same pan, sauté onions and mushrooms until soft.
Sprinkle 1 tbsp flour over mushrooms; cook 1 minute.
Deglaze with beef broth. Simmer 3 minutes.
Stir in cream and simmer until thickened. Season with salt/pepper.
Serve sauce poured over the crispy schnitzel.
