Peruvian Lomo Saltado

Ingredients:

  • 1 lb (450g) Sirloin steak, sliced into strips

  • 3 cups Frozen french fries (cooked according to package)

  • 1 Red onion, sliced into thick wedges

  • 2 Roma tomatoes, sliced into wedges

  • 2 tbsp Soy sauce

  • 1 tbsp Red wine vinegar

  • 1 Aji amarillo pepper (seeded and sliced) or yellow bell pepper

  • Fresh cilantro, chopped

  • Rice for serving

Instructions:

  1. Cook french fries and set aside.

  2. Season beef with salt and pepper. Sear in a very hot wok/pan with oil until browned. Remove beef.

  3. Add onions and peppers to the pan. Stir-fry 2 minutes.

  4. Add tomatoes, soy sauce, and vinegar. Cook 1 minute (tomatoes should keep shape).

  5. Return beef to the pan. Toss everything together.

  6. Turn off heat. Gently fold in the cooked french fries and cilantro.

  7. Serve immediately alongside white rice.
