Peruvian Lomo Saltado
Ingredients:
1 lb (450g) Sirloin steak, sliced into strips
3 cups Frozen french fries (cooked according to package)
1 Red onion, sliced into thick wedges
2 Roma tomatoes, sliced into wedges
2 tbsp Soy sauce
1 tbsp Red wine vinegar
1 Aji amarillo pepper (seeded and sliced) or yellow bell pepper
Fresh cilantro, chopped
Rice for serving
Instructions:
Cook french fries and set aside.
Season beef with salt and pepper. Sear in a very hot wok/pan with oil until browned. Remove beef.
Add onions and peppers to the pan. Stir-fry 2 minutes.
Add tomatoes, soy sauce, and vinegar. Cook 1 minute (tomatoes should keep shape).
Return beef to the pan. Toss everything together.
Turn off heat. Gently fold in the cooked french fries and cilantro.
Serve immediately alongside white rice.
