Maine Lobster Roll
Ingredients:
1 lb Cooked lobster meat (knuckle and claw is best), chilled and chopped
4 Split-top hot dog buns
2 tbsp Mayonnaise
1 tbsp Lemon juice
1 stalk Celery, finely diced
1 tbsp Fresh chives, chopped
2 tbsp Unsalted butter, melted
Salt and pepper to taste
Instructions:
In a mixing bowl, combine the lobster meat, mayonnaise, lemon juice, celery, and chives.
Gently toss to coat. Season lightly with salt and pepper. (Do not over-mix; keep chunks intact).
Brush the sides of the buns with melted butter.
Toast the buns in a skillet over medium heat until golden brown on the sides.
Stuff the buns generously with the cold lobster mixture. Serve immediately.
