Maine Lobster Roll

Ingredients:

  • 1 lb Cooked lobster meat (knuckle and claw is best), chilled and chopped

  • 4 Split-top hot dog buns

  • 2 tbsp Mayonnaise

  • 1 tbsp Lemon juice

  • 1 stalk Celery, finely diced

  • 1 tbsp Fresh chives, chopped

  • 2 tbsp Unsalted butter, melted

  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine the lobster meat, mayonnaise, lemon juice, celery, and chives.

  2. Gently toss to coat. Season lightly with salt and pepper. (Do not over-mix; keep chunks intact).

  3. Brush the sides of the buns with melted butter.

  4. Toast the buns in a skillet over medium heat until golden brown on the sides.

  5. Stuff the buns generously with the cold lobster mixture. Serve immediately.
