Moo Shu Pork

Ingredients:

  • 1/2 lb Pork loin, sliced into strips

  • 2 Eggs, scrambled

  • 2 cups Cabbage, shredded

  • 1/2 cup Wood Ear mushrooms (rehydrated and sliced) or Shitake

  • 1/4 cup Bamboo shoots, sliced

  • 2 tbsp Hoisin sauce

  • 1 tbsp Soy sauce

Instructions:

  1. Cook pork in a wok until browned. Remove.

  2. Add cabbage, mushrooms, and bamboo shoots. Stir-fry until soft.

  3. Add pork and scrambled eggs back to the pan.

  4. Stir in soy sauce and hoisin. Mix well.

  5. Serve with warmed thin pancakes (Moo Shu pancakes) or flour tortillas, with extra hoisin on the side.
