New England Clam Chowder

Ingredients:

  • 4 slices Bacon, chopped

  • 1 Onion, diced

  • 2 stalks Celery, diced

  • 2 cups Potatoes, cubed

  • 1 cup Clam juice (bottled)

  • 2 cans (6.5oz each) Chopped clams (retain juice)

  • 1 cup Heavy cream

  • 1 cup Whole milk

  • 2 tbsp Butter

  • 2 tbsp Flour

  • Salt and pepper to taste

Instructions:

  1. Fry bacon in a large pot until crispy. Remove bacon bits, leave fat.

  2. Sauté onion and celery in bacon fat until soft.

  3. Sprinkle flour over veggies; stir for 1 minute.

  4. Pour in clam juice (bottled + from cans) and add potatoes.

  5. Simmer until potatoes are tender (about 15 minutes).

  6. Stir in milk and cream. Heat through but do not boil.

  7. Add chopped clams and butter. Simmer gently for 2 minutes.

  8. Season with salt/pepper. Top with bacon bits.
