Southern Fried Chicken

Ingredients:

  • 1 Whole chicken (cut into 8 pieces)

  • 2 cups Buttermilk

  • 2 cups All-purpose flour

  • 1 tbsp Salt

  • 1 tbsp Black pepper

  • 1 tbsp Paprika

  • 1 tsp Garlic powder

  • 1 tsp Cayenne pepper

  • Vegetable oil for frying (about 4 cups)

Instructions:

  1. Place chicken pieces in a bowl and cover with buttermilk. Refrigerate for at least 2 hours (or overnight).

  2. In a large bag or bowl, mix flour and all spices.

  3. Heat oil in a deep pot or skillet to 350°F (175°C).

  4. Remove chicken from buttermilk (let excess drip off), then dredge thoroughly in the flour mixture. Press flour into the chicken.

  5. Fry in batches (don't overcrowd) for 12–15 minutes, flipping halfway, until golden brown and internal temp reaches 165°F (74°C).

  6. Drain on a wire rack.
