Sweet Potato Casserole with Pecan Streusel

Ingredients:

  • Filling:

    • 4 cups Sweet potatoes (cooked, peeled, and mashed)

    • 1/2 cup White sugar

    • 2 Eggs, beaten

    • 1/2 cup Milk

    • 1/2 cup Butter, melted

    • 1 tsp Vanilla extract

  • Topping:

    • 1/2 cup Brown sugar

    • 1/3 cup All-purpose flour

    • 1/3 cup Butter, melted

    • 1 cup Chopped pecans

Instructions:

  1. Preheat oven to 325°F (165°C).

  2. In a large bowl, mix mashed sweet potatoes, sugar, eggs, milk, butter, and vanilla until smooth. Transfer to a 9x13 baking dish.

  3. In a separate small bowl, mix brown sugar and flour. Stir in melted butter and pecans until crumbly.

  4. Sprinkle the pecan mixture evenly over the potatoes.

  5. Bake for 30 minutes until the topping is browned and filling is hot.
